Pumpkin chai latte: the pumpkin spice latte without coffee

Every autumn the same thing: the pumpkin spice latte is back. Everyone wants one, and hardly anyone stops to think it’s actually coffee with syrup. Lovely at four o’clock, but not if you’d rather skip the caffeine in the evening.

So we made it without coffee. With Gouden Pompoen, our autumn chai with pumpkin, apple, ginger, cinnamon, cardamom and clove. No tea base, no caffeine — just the spices and pumpkin you expect from a pumpkin spice latte, frothed into a golden-orange latte.

Ingredients (for 1 mug)

  • 2 heaped teaspoons of loose Gouden Pompoen (about 6 grams)
  • 100 ml boiling water
  • 150 ml milk (or oat or almond drink)
  • Optional: 1 tablespoon pumpkin purée
  • Optional: 1 teaspoon maple syrup
  • A pinch of cinnamon or nutmeg, and a star anise to finish

Method

  1. Steep 2 teaspoons of Gouden Pompoen in 100 ml boiling water for 8 minutes, then strain. The pumpkin pieces and spices need that time.
  2. Warm the milk and stir in the pumpkin purée if you’re using it. That gives you the velvety orange latte you know from the coffee bar.
  3. Froth the milk with a milk frother, or whisk hard.
  4. Pour the chai into a tall glass and stir in the maple syrup if you like.
  5. Add the warm milk, spoon the foam on top, dust with cinnamon or nutmeg and top with a star anise.

Tip: the coffee-bar version at home

Want that thick, glossy foam? Froth the milk before adding the pumpkin purée, then stir the purée into the warm part under the foam. The foam stays light and white, and all the colour sits underneath.

Prefer it cold?

Put 2 tablespoons of Gouden Pompoen in half a litre of cold water in the fridge overnight. Strain, pour over ice, add cold milk and whisk in a spoonful of pumpkin purée. The iced pumpkin chai latte — without coffee.

Good to know

Gouden Pompoen contains no black or green tea and so no caffeine. The sweetness comes from the apple and pumpkin — if you want it sweeter, that spoon of maple syrup is enough.
